There is more to Spanish cuisine than paella and patatas bravas. Today we are going to share a lovely recipe with you which is called Spanish style Pork with Chickpeas. Oh yummy! This sounds so promising and yummylicious. This is a very quick recipe and you will love the results too. Anybody can cook this recipe as it does not require special cooking skills. Take a look!

Here Is The Recipe For Spanish Style Pork With Chickpeas:

Preparation Time: 20 Minutes
Cooking Time: 20 Minutes
Serves: 4

Ingredients:

Extra virgin olive oil – 3 tablespoon
Ground cumin – 1 teaspoon
Halved scallions or spring onion – 2 bunches
Kosher salt
Fresh ground pepper
Ground cumin – 1 teaspoon
Smoked paprika – 1 teaspoon
Pork tenderloin – 1 large
Thinly sliced clove – 2
Drained and Diced tomatoes – 1 can
Chickpeas – 1 can
Sliced and drained Roasted Pepper – 1 cup
Almond butter – 1 tbsp
Red wine vinegar – 1 tsp
Chopped oregano (fresh) – 1 tbsp

Method Of Preparation:

Step 1

Firstly you need to preheat your broiler. You should toss the scallions or spring onion in a tbsp of olive oil and salt on top of a baking sheet. Season it with pepper. Broil the spring onion or scallions. Turn it till it gets charred. This should take about 10 minutes. If you are using scallion, it will take only 5 minutes.

Step 2

Now while this is getting charred. Just combine the paprika, cumin, pepper and salt in a small bowl. Make a cut lengthwise at the center of pork. Make sure it is deep cuts. Cut it halfway through. Now you need open this pork just like you would open a book. Now it like crosswise so that you get 4 pieces. Season it with the spice mix. Make sure you season it well.

Step 3

Now take a Dutch oven and heat olive oil in it. Heat only 1 tbsp olive oil. Make sure it is on medium heat. Now add the seasoned pork and cook till it gets brown at the bottom. This should take 5 minutes. Transfer this to a plate. Add the remaining olive oil and also the chopped garlic in the pot. Cook it till it is golden. Make sure you stir. This will take two minutes or so. Add the diced canned tomatoes. Cook and stir till it gets soft. This will take 3 minutes or so. Now add the reserved tomato juice, roasted pepper and the chickpeas in it. Add the cooked pork in it. The brown side should be facing up. Cover the Dutch oven and let it cook for about 12-13 minutes. Check whether it is cooked through or not after 12 minutes.

Step 4

Remove the cooked pork from this Dutch oven. Stir in the vinegar, almond butter and the oregano in the chickpea mix. Now serve it with the pork and for garnishing, you can use the charred scallions or spring onions. Your dish is ready to serve!

Wow! This was very easy. All you need to do now is find the right pork tenderloin which is fresh and of good quality. Make sure you have all the ingredients.
