We will start this by grilling Asparagus, Bell peppers, Onions, Mushroom, Corn cob and
Zucchini till tender and tossing them with cooked pasta. Here we use rotini pasta as the dressing is easily absorbed by the pasta. Later will mix the dressing prepared with olive oil, dijon mustard, Oregano, Basil leaves, Garlic, Salt and Black Pepper to make the pasta
creamier and tastier.

Ingredients For The Grilled Vegetable Pasta Salad:
Rotini Pasta – 3 cups
Asparagus – 1 bunch
Zucchini – 2
Mushroom – 1 cup
Bell pepper red – 1 and yellow – 1
Onion – 2
Large Basil Leaves – 10
Balsamic vinegar – 2 tbsp
Oregano -1 tsp
Dijon mustard – 1 tsp
Garlic – 1 clove
Lemon Juice – 1 tsp
Corn Cob – 1
Olive oil – 3 tbsp
Salt – 1 tsp
Black Pepper – 1 tsp
Parmesan Cheese – 1/2 cup shredded
Mayonnaise – 2 tbsp (optional)
Step By Step Instructions:
First, cook the pasta in boiling water in a vessel. Add salt to the boiling water and cook.
When it is done drain the water and rinse under cool water and keep it aside.
Wash all the vegetables properly and cut them into pieces accordingly. Cut Asparagus into 1-inch pieces, Zucchini into the half, Remove the seeds of Bell peppers and cut into 1-inch pieces, dice the Mushrooms. Take onions and slice it thin and cut Corn cob into the half. Place all the chopped vegetables in a baking tray and brush olive oil on top of the vegetables. Toss the vegetables so as to coat the oil for the entire vegetables evenly. Sprinkle Salt and Black Pepper on top of it.
The grilling time is different for each vegetable. You can cook Asparagus and Bell peppers for 4 to 5 minutes and Zucchini, Mushroom for about 10 to 12 minutes and Corn Cob for about 5 minutes. Remove the vegetables from the grill but make sure the vegetables are tender before removing.
Now for a bowl add olive oil, balsamic vinegar, Dijon mustard, nicely minced garlic, Oregano, Basil Leaves, Salt, Black Pepper and nicely whisk the mixture. Now the dressing is ready. You can add this according to your taste. If you want it creamy you can add mayonnaise to the Sauce.
To a large bowl add the cooked Pasta, grilled vegetables, and the prepared Sauce and nicely toss until the dressing is evenly coated. Add lemon juice and toss it again. As we have used Rotini Pasta the dressing will be nicely coated to the pasta and this will give your pasta salad a nice flavor. Now we can add shredded parmesan cheese and enjoy our tasty, yummy and healthy salad.
You can have this as soon as it is ready or you can refrigerate it and have it chill. Both the ways it tastes yummy. Enjoy this with your loved ones. Happy cooking.
