Super Tasty Spanish Prawn Empanadas Recipe

Here Is The Recipe For Spanish Prawn Empanadas :

Spanish Prawn Empanadas

Preparation Time: 30 Minutes
Cooking Time: 35 Minutes
Serves: 6


Olive oil – 2 tbsp
Chopped brown onion – 1
Chopped red capsicum – 1 small
Chopped garlic cloves – 2
Sweet paprika – 2 tsp
Saffron thread – 1 large pinch
Chopped roma tomato – 1
Tomato paste – 1 tbsp
Chopped stuffed green olives – 50 grams
Chopped raisins – 50 grams
Peeled and chopped cooked prawns – 250 grams
Chopped coriander – 1/3 cup
Olive oil
Egg yolk – 1
Water – 1 1/2 tbsp
Frozen shortcrust pastry (thawed) – 3 sheets

Method Of Preparation:

Step 1

Take a medium saucepan and heat oil in it over medium heat. Now add the capsicum, onion and the garlic. Cook it and stir it often for about 8 minutes till the vegetables get soft. Add the saffron, paprika, tomato paste, tomato, raisin and olive. Cook it and stir it occasionally. Stir it for 3 minutes or so till it is combined and the liquid gets absorbed. Transfer it to a heatproof bowl. Set it aside for about 1 hour. Let it cool.

Step 2

Now add the coriander and prawns. Season it with salt and pepper. Stir it to combine.

Step 3

Now preheat the oven to a temperature of 180 degrees C. Brush the baking tray with the oil. Grease it with the oil. Combine water and egg yolk in a bowl. Use a pastry cutter which is round in shape to cut discs from the pastry. Cut about 12 discs. Brush the pastry disc edges using egg yolk mix. Place 1 tbsp of the prawn mix on half of the pastry disc. Fold it in half to close the filling. Press edges using a fork to seal it. Now place it on the baking tray which you prepared.

Step 4

Now brush the top of empanadas using egg yolk mix. Take a skewer to make pricks on the empanadas. Prick many times. Bake it for about 20 minutes till it is golden. Set it aside to cool it a little. Serve it.
