If you are fond of Pork Loin but are tired of the same old way of preparing it and looking for some interesting way to prepare this delicious cut of meat, look no further. Pork Loin – 3 pound
Pineapple Chunks, drained – ½ can (8 ounces)
Dijon mustard – 1 tablespoon
Honey – 2 tablespoons
Ground black pepper – ½ teaspoon
Salt – as per taste
Start by preheating your oven to a temperature of 200 degrees Celsius or 400 degrees Fahrenheit.
In a small bowl, add in the Dijon mustard, honey and black pepper and mix them together till they achieve the texture of a smooth paste.
Place a cast iron pan or skillet on the burner and heat it up over medium-high heat. Once hot, place the pork loin on the skillet and cook till it gets browned evenly on all the sides. This should take about 5 minutes. Once done, transfer the pork loin into a baking pan.
Now spread the prepared honey mustard paste evenly oven the cooked pork loin. Spread pineapple chunks over and around the meat and sprinkle salt over the pork loin.
Now insert a cooking thermometer inside the pork loin and cover tightly using aluminum foil. Bake the dish in your preheated oven for about 5 minutes. Now reduce the temperature of the oven to 190 degrees Celsius or 375 degrees Fahrenheit and continue to cook for another 30-45 minutes till the pork is fully cooked. The instant-read thermometer should give a reading of 145 degrees at this point.
Once done, transfer the prepared dish to your kitchen counter or work surface and allow it to rest at room temperature for a minimum of 4-5 minutes. Now take all the pineapple chunks as well as the other drippings left behind in the pan and blend in a blender to get a smooth sauce. Serve the prepared pork loin dish with this savory and sweet sauce for a finger-licking taste.
