Sweet And Sour Pork
Pork tenderloin – 1 pound (cut into 0.5 inch pieces)
Balsamic vinegar – 2.5 tablespoons
Soy sauce – 2 teaspoons
Ketchup – 3 tablespoons
Cornstarch – 1 tablespoon
Kosher salt – 1 tablespoon
Sugar – 3 tablespoons
Vegetable oil – 3 tablespoons
Garlic – 3 cloves (minced)
Carrots – 2 (sliced thin)
Spring onions – 3 (cut into pieces)
Snow peas – 3 cups
Yam – ½ (peeled and cut into strips)
Vegetable oil – sufficient for deep frying
Salt – for seasoning
Method of Preparation:
Sweet and sour pork preparation: Take half spoon vinegar in a large sized bowl and add a little salt to it. Put in the pork and toss it to mix the ingredients. In another bowl, combine the remaining vinegar, sugar, ketchup, soy sauce, cornstarch, half cup water and a little salt.
Heat 2 spoons vegetable oil in a pan, transfer the pork into the pan once the oil is heated. Cook for 3 to 5 minutes and remove the pork and set is aside.
Heat one spoon oil in the pan and sauté the garlic with little sugar and salt. Stir in the spring onions, carrots and cook for 2 minutes. Then add the pork, peas, sauce mixture and cook for 3 more minutes, so that the sauce thickens. Remove from heat when the sauce reaches the desired consistency.
Yam chips: Heat vegetable oil in a deep frying pan. In the mean while, wash the yam strips in cold water and dry it on a paper towel.
Once the oil is hot enough for frying, add the yam to the oil and fry until the strips turn golden brown. Drain the excessive oil by placing the fried yam on kitchen paper. Sprinkle slat when hot.
Transfer the sweet and sour pork to a serving plate and serve with the yam chips.
