Prawns Meat: 300 gm, washed and chopped
Gram flour: 1 cup
Rice Flour: 1 cup

Grounded Black Pepper: 1 teaspoon
Turmeric powder: Half teaspoon
Fish sauce: 1 tablespoon
Shrimp paste: 1 teaspoon
Egg: 1
Baking soda: Half-teaspoon
Spring onions: about 3 in number, finely sliced
Coriander leaves: fresh and finely chopped about half a cup
Red chilli’s : 2,finely chopped, for sprinkling over the Prawns
Water: as required, depending upon consistency
Salt: one and a half tablespoon
Vegetable Oil: for deep frying
Lettuce wraps: 2
Cucumber: 1,peeled and cut into thin slicess

Step 1:

First of all remove the Husks of the Prawns, chop it into fine size pieces without partying its tail. Wash it off with cold water and stain it. Now, take a medium sized bowl and put these prawns in this bowl, and season it with grounded black pepper, fish sauce and fresh ginger juice. Cover the bowl with the lid and keep aside these marinated prawns for about half an hour.

Step 2:

This is the most crucial step of this recipe. In this step, we will make the batter for coating the Prawns. For this, you need a small bowl and put in it the gram flour, rice flour , in the prescribed quantity along with water, so as to make a thick and consistent paste. Mind it you have to put water only in that much quantity in which the gram and rice flour will be merged and mixed properly. Excess of water will not make a fine crust for coating the prawns. Now, beat an egg and gradually add this beaten egg in the mixture of rice and gram flour. Whip the whole mixture and make a lump-free batter. Keep this mixture a side for 10 minutes.

Step 2:

Now put the marinated prawns in the batter and mix it in such a way that the prawns are totally encapsulated in the batter. Then, take a skillet pan or a wok and filled it with vegetable oil. Heat the oil on the high flame and when it began to release fumes, simmer it to medium flame. Now, take this prawn batter in small quantities and put it in the hot oil one-by-one. Deep-fry it for about 4-5 minutes until the prawn fritters are golden in color. And then flip the side, so that the prawns are cooked and crisped from both the sides.

For this, you need to simply pre-heat the oven at 180 ˚C and place a baking paper over the baking tray.
