Alambre is a very popular and traditional Mexican dish made of grilled beef, bacon, peppers and onions with a topped with the goodness of mellow and buttery Oaxaca cheese. This dish bursts with a combination of delightful flavors and textures and makes a wholesome and delicious family dinner. It is relatively simple to prepare and is usually served along with a creamy guacamole dip.

Recipe For Alambre:
Preparation Time: 15 Minutes
Cooking Time: 45 Minutes
Beef steak, top sirloin – one pound
Bacon, cut into half inch thick strips – four ounces
Olive oil – two tablespoons
Garlic – three cloves
Chipotle (smoked dried jalapeno), deseeded – three
Water – one cup
White onion – one
Red bell peppers – one
Green bell pepper – one
Tomatoes, deseeded and sliced – one cup
Cilantro, chopped – half cup
Oaxaca cheese – one cup
Flour tortillas eight
Sour cream – one cup
Lemon wedges – eight
Salt to taste
For the beef marinade, boil the garlic and chipotle in one glass of water and reduce it to half the quantity, until the chilies become soft. Once it cools down, grind it to a fine paste, along with the reduced liquid. Transfer this to a zip lock pouch and add salt for seasoning. Place the beef stake in the pouch, seal it and massage it well with the marinade. Refrigerate it for at least two hours for maximum flavor.
Heat a grill and place the wash and dried onion, bell peppers, jalapeno and the marinated steak over it. Flip once in a while, until they have charred slightly and are infused with a smoky flavor. Remove from the grill and transfer to a plate, for cooling.
Heat a heavy bottom skillet over moderately high heat and add the olive oil. Once the oil is hot, add the bacon strips and cook until soft and not too crispy, for about ten minutes. Transfer the cooked bacon to another bowl and reserve the dripping.
Once the grilled ingredients have cooled down sufficiently, cut the onions and bell peppers into thin slices and the beef steak into bite sized pieces.
Stir in the grilled beef strips into the same skillet and saute for a few minutes in the bacon dripping. Cover it and cook thoroughly, stirring occasionally. Now add the bacon, sliced tomatoes, grilled vegetables and chopped cilantro. Give it a quick stir and remove from heat. Sprinkle the cheese on top and keep it covered till the cheese melts completely. Keep the dish warm.
Recipe For Guacamole:

Avocados, ripe – three
Lemon juice, freshly squeezed – two tablespoons
Onions, finely chopped – quarter cup
Green chilies, finely chopped – one teaspoon
Cilantro, finely chopped – one tablespoon
Tomato, deseeded and chopped finely – quarter cup
Crushed black pepper – half teaspoon
Salt to taste
Cut the avocados into two halves, remove the stone and score the flesh with a sharp knife . Scoop out the flesh with a spoon and mash it coarsely with a fork.
Stir in the onions, green chilies, tomatoes, cilantro, lemon juice and crushed pepper. Add salt for seasoning, cover it with a cling film and refrigerate until being served.
Keep a flat pan over moderate heat and warm the tortillas. Place a tortilla over a dry plate and spoon in the Mexican alambre along one half of the tortilla. Top it with sour cream, squeeze a dash of lemon juice over it and fold over. Serve along with chilled guacamole dip.
