Spaghetti pasta: 200 grams
Smoked salmon trimmings: 120 grams
Butter: 1 teaspoon
Eggs: 2 pieces
Double cream: 15ml
Garlic: 1 clove
Parmesan cheese: 3 tablespoon
Chives: ½ bunch
Black Pepper: 1 teaspoon
Salt: to taste
Method of Preparation:
Heat water in a large pan. Add the spaghetti pasta when the water starts boiling. Mix in half a teaspoon of salt and oil. Stir well and let it cook for 6 to 7 minutes, until it is perfectly cooked. However, make sure that the pasta retains a light bite and must not be mushy. Drain the excess water and pour some cold water over it. Keep aside in a sieve until the water drains out completely.
Take a small pan and heat the butter. When the butter melts, add a clove of crushed garlic. Fry for a minute and let it turn golden brown in color. Remove from heat and do not let it burn.
Beat the eggs and keep aside. Lightly beat the double cream. Mix these in a small bowl along with the fried garlic and half the quantity of grated Parmesan cheese. Stir well and tip in the smoked salmon trimmings. If you do not have smoked salmons ready at home, you can always prepare some. Marinate salmon pieces with salt, black pepper, olive oil and lemon juice. Grill it in a pan or oven and its done.
