Here’s The Recipe For A Tasty Italian Chicken With Beans, Ham And Basil:

Preparation Time: 15 Minutes
Cooking Time: 1 Hour 15 Minutes
Servings: 4

Ingredients:

Skinless chicken thighs: 8 pieces
Cannellini beans or white beans: 400 grams
Olive oil: 2 tablespoon
Tomatoes: 800 grams
Dry ham: 8 slices
Garlic: 2 pieces
Dry white wine: 175ml
Basil: a bunch
Salt: to taste
Black pepper: ½ teaspoon

Method Of Preparation:

Step 1

Take the chicken thighs and poke them with a fork. Rub some salt and black pepper over it, covering it from all sides. Pinch the basil leaves from the sprig, wash and keep it ready. Keep one leaf over each thigh and carefully wrap it with a slice of dry ham. Tuck the loose ends of the ham under the chicken thigh.

Step 2

Use a large roasting pan to cook the chicken pieces. Heat olive oil and place the chicken thighs wrapped in ham on the hot pan. Cook for some time until the chicken turns light golden in color. Flip it over from time to time, allowing the ham to cook and turn crispy. It will take somewhere around 4 to 5 minutes to complete this process.

Step 3

Slice the tomatoes into halves if you are using small ones but, if you have chosen the larger variety, make quarters. Add the tomato pieces to the chicken along with some more hand torn basil leaves and dry white wine. Make sure that you choose a good quality wine to enhance the taste and flavor of this authentic Italian dish. Slice the garlic bulb into two and place it on the pan. Season the tomatoes with some salt and pepper. Cover the roasting tin with aluminum foil and let it cook in a pre-heated oven at 160 degree Celsius for 40 minutes.

Step 4

After 35 to 40 minutes, remove the chicken from the oven and turn up the heat to 220 degree Celsius. In the meanwhile, uncover the aluminum foil from the roasting pan and add the cannellini or white beans. Mix it with the tomato gravy and put it back in the oven uncovered. Let it cook for half an hour, until the chicken becomes soft and tender. By this time, the garlic, tomatoes and chicken will also turn slightly crispy on the outside.

Step 5

Before serving the dish, tear a few basil leaves and scatter it over the chicken. Serve hot with a crusty bread of your choice and devour this mouthwatering Italian delicacy. You can also serve it with a fresh salad made with cucumber, tomato and flavored with a dash of lime juice.
