Lemony Prawns And Chorizo Rice Pot

Here’s The Recipe For Lemony Prawns And Chorizo Rice Pot:

Preparation Time: 15 Minutes
Cooking Time: 25 Minutes
Servings: 4

Ingredients:

Chorizo: 50 grams
Peeled raw prawns: 200 grams
Red pepper: 2 small
Onion: 1 piece
Frozen peas: 100 grams
Garlic: 2 cloves
Long grain rice: 250 grams
Olive oil: 1 tablespoon
Red chilli: 1 piece
Turmeric: ½ teaspoon
Lemon juice: from 1 lemon
Lemon zest: from 1 lemon
Salt: to taste

Method Of Preparation:

Step 1

Soak the rice for 30 minutes before starting the recipe. This will give you long, fluffy grains of rice. In a large wide pan, take some water and let it boil.

Step 2

In the meanwhile, cut the chorizo into thin slices. Deseed and slice the red peppers, crush the garlic cloves and slice the onion. You can also deseed the red chilli, if you wish to avoid the heat. Defrost the peas and prawns, if you are using the frozen variety. Keep the lemon juice and zest ready.

Step 3

Heat olive oil in a pan and add the onion. Fry for a minute or two until it turns translucent. Now add the sliced peppers and red chilli along with the chorizo. Let it cook on high heat for 3 to 4 minutes. Mix in turmeric and salt. Stir in the soaked rice. Stir well and make sure that the rice is nicely coated with the spices. Add 500ml of boiling water into the pan and give a quick stir. Cover the pan and let it cook for 10 to 12 minutes. Keep checking to ensure that the rice is perfectly cooked.

Step 4

After 10 minutes open the cover and add the prawns. Mix in peas along with a splash of water. The rice will be almost cooked by this time. Cover and let it cook for 5 minutes, until the prawns are perfectly done. Open the lid and sprinkle lemon juice and zest over it.

Step 5

Serve hot lemony prawns and chorizo rice pot with a few lemon wedges.
