Tasty Ricotta, Tomato And Spinach Frittata Recipe

Ricotta Cheese: 100 grams
Onion: 1 large
Cherry tomatoes: 300 grams
Spinach: 100 grams
Eggs: 6 pieces
Basil leaves: a handful
Olive oil: 1 tablespoon
Ingredients for salad
Cucumber: 1 small
Onion: 1 small
Tomato: 1 piece
Lemon juice: 1 teaspoon
Salt: to tastea
Black pepper: ½ teaspoon

Method of Preparation:

Step 1

Finely slice the onions and cut the cherry tomatoes into halves. Wash and clean the spinach leaves.

Step 2

Heat some olive oil in a non-stick pan. Add the sliced onions and fry for 5 to 6 minutes until it turns light brown in color. At this point, add the cherry tomatoes and stir well. Let it cook for a minute or two, until it starts softening.

Step 3

Switch off the flame and add the spinach leaves. Tear a few basil leaves with your hand. Add it to the cooked onion and tomatoes. Let the leaves wilt a bit.

Step 4

Take rectangular baking dish. Brush olive oil on the pan. Spread the onion, tomato and spinach mixture at the bottom of the pan. Take a dollop of ricotta cheese and gently spread it over the vegetable. Repeat this process to add cheese over the entire layer.

Step 5

In a big bowl, break 6 eggs and whisk with salt and black pepper. Beat the eggs until it is slightly fluffy. Pour this on top of the cheese and vegetable layer. Let it cook in a pre-heated oven at 200 degree Celsius for 20 to 25 minutes. When fully cooked, it will have a beautiful golden crust on top. Remove it from the baking dish and allow it to cool down slightly. Cut into small pieces before serving.

Step 6

To prepare the accompanying salad with the frittata, chop some cucumber, tomato and onion. Sprinkle lemon juice on top and season it with salt and black pepper. Toss everything and serve it along with this tasty ricotta, tomato and spinach frittata.
