Tempura Chicken With Plum Sauce And Stir Fried Vegetables

Following Are The Steps To Make Tempura Chicken With Plum Sauce And Stir Fried Vegetables:

Tempura chicken

Preparation Time: 20 minutes
Cooking Time: 9 minutes
Total Time: 29 minutes
Serving: 4

Ingredients:

Boneless and skinless chicken, cut into strips (2 whole)
½ cup of cornstarch
1 large beaten egg
1 cup of chill water
1 cup of all-purpose flour
Peanut oil (for frying the chicken)
Plum sauce (according to the recipe)
1 teaspoon of essence
Ginger and stir fried vegetables (according to the recipe)

For Essence

2 teaspoon of paprika
2 teaspoon of salt
2 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of black pepper
1 teaspoon of dried leaf oregano
1 teaspoon of cayenne pepper
1 teaspoon of dried thyme

For Plum Sauce

½ teaspoon of minced shallots
1 cup of plum preserves
4 teaspoon of rice wine vinegar
1 teaspoon of minced garlic
1 teaspoon of brown sugar
½ teaspoon of red pepper flakes
½ teaspoon of minced fresh ginger
A small pinch of 5-spice powder

For Gingered Stir-fried Vegetables

1 teaspoon of sesame oil
1 teaspoon of sugar
¼ cup of soy sauce
3 teaspoon of minced ginger
3 teaspoon of vegetable oil
1 ½ cups of stringed snow pea pods
½ cup of sliced carrots (cut into ¼ inch thick)
½ cup of thinly sliced shiitake mushrooms
½ cup of thinly sliced fresh porcini mushrooms
½ cup of sliced green onions (cut into ¼ inch thick)

Direction To Prepare The Chicken Or Tempura:

Step 1:

Have a light coating of cornstarch on chicken stripe. Keep aside for some time. Preheat the oil to 360 degrees in a large pot.

Step 2:

Take a bowl and add already beaten egg. Add essence (recipe given below) and flour and mix them lightly or until smooth. Dip the chicken stripe into the batter. Shake to ensure that you haven’t applied in excess. Put into the preheated oil and fry the stripes until they turn golden brown on all the sides for 2-3 minutes. Remove from the pot and keep on paper towel.

Step 3:

Serve the chicken with plum sauce (recipe given below) and gingered stir-fried vegetables (recipe given below).

How To Prepare Essence?

Step 1:

Combine all the ingredients given under essence and mix properly. Store in an airtight jar till you bring it into use.

How To Prepare Plum Sauce?

Step 1:

Take a saucepan and add plum preserves, shallots, vinegar, garlic, ginger, brown sugar, 5spice powder and pepper flakes. Stir well to combine properly. Bring the ingredients to boil. Stir the ingredient and reduce and heat and let it simmer until the boiled ingredients become thick. This can probably take 4-5 minutes. Remove the sauce from the heat and keep in the plate as serving.

How To Prepare Gingered Fried Vegetables?

Step 1:

Take a bowl and combine sesame seeds, soy sauce and sugar. Mix well and keep aside.

Step 2:

Take a large wok and add vegetable oil in it. Heat on high heat. Add ginger and cook until it starts leaving a fine aroma or for some 30 seconds. Add carrots and stir-fry until it begins to soften. Next is to add snow peas and stir-fry for the next 1-2 minutes. Add onions and soy sauce mixture (in step 1) and stir well. Cook for additional 45 seconds.

Step 3:

Remove from the heat and serve with tempura chicken.
