Put all the ingredients for the red curry paste in a food processor and mix well until everything blends together. Blitz until it attains a smooth consistency. If required, 1 or 2 tablespoon of extra coconut milk can be added to form a fine paste. The red curry paste at this point will be extremely spicy but, it will lose its sharpness once it is cooked.

Step 2

Cut the chicken into small chunks. Marinate the chicken pieces with salt, red curry paste, coconut milk, hung curd and a dash of lime juice. Mix very well until all the pieces are coated. Keep aside for 20 minutes. Cut the onions, red and green peppers into small squares. Arrange a piece of chicken followed by peppers, onion and chicken on skewers. Thread all the chicken pieces similarly and grill on a barbeque for 8 to 10 minutes. Once the chicken is well cooked and charred it is ready to be served with salads. Sprinkle lime juice on top for extra flavor and taste.
