Thai Red Curry Chicken Kebabs

Ingredients For Kebab:

Boneless chicken: 500 grams
Hung curd: 2 tablespoon
Coconut milk: 2 tablespoon
Red curry paste: 3 tablespoon
Red onion: 1 large
Red pepper: 1 medium size
Green pepper: 1 medium size
Lime: 1 piece
Salt: as per taste

Ingredients For Thai Red Curry Paste:

Onion: ¼ cup
Red chilli: 2 pieces
Thai chilli sauce: 2 teaspoon
Galangal: 1 inch piece
Fresh lemongrass stalk: 3 tablespoon
Tomato puree: 2 tablespoon
Coriander powder: ¾ teaspoon
Cumin powder: 1 teaspoon
White pepper powder: ¼ teaspoon
Chili powder: 1 teaspoon
Fish sauce: 2 tablespoon
Shrimp paste: 1 teaspoon
Sugar: 1 teaspoon
Lime juice: 2 tablespoon
Coconut milk: 3 tablespoon

Method Of Preparation:

Step 1

For the Thai Red Curry Chicken Kebabs, a homemade red curry paste is ideal. Although, it is easily available in the market, a fresh paste will give the kebab its authentic taste and flavor. Put all the ingredients for the red curry paste in a food processor and mix well until everything blends together. Blitz until it attains a smooth consistency. If required, 1 or 2 tablespoon of extra coconut milk can be added to form a fine paste. The red curry paste at this point will be extremely spicy but, it will lose its sharpness once it is cooked.

Step 2

Cut the chicken into small chunks. Marinate the chicken pieces with salt, red curry paste, coconut milk, hung curd and a dash of lime juice. Mix very well until all the pieces are coated. Keep aside for 20 minutes. Cut the onions, red and green peppers into small squares. Arrange a piece of chicken followed by peppers, onion and chicken on skewers. Thread all the chicken pieces similarly and grill on a barbeque for 8 to 10 minutes. Once the chicken is well cooked and charred it is ready to be served with salads. Sprinkle lime juice on top for extra flavor and taste.
