Middle Eastern food is not just about pita and hummus or falafel. There is so much more! Today we have a delicious recipe for you from Uzbekistan. It is called Uzbek Plov. Uzbek Plov is simpler words is Lamb and Rice Pilaf. Pilaf is a rich dish which is cooked slowly in a broth. The recipe is not as difficult but yes, you need to concentrate and follow the recipe to make it right. Take a look at the recipe!
Here Is The Recipe Of Middle Eastern Uzbek Plov :
Preparation Time : 20 Minutes
Cooking Time : 65 Minutes
Serves : 6
Boneless Lamb Leg – 2 lb
Basmati Rice – 2 cups
2 Garlic Heads – whole
2 sliced onions
4 carrots – sliced into shape of matchstick
Cumin seeds – 2 tbsp
Coriander seeds – 2 tbsp
Black peppercorns (whole) – 1 tsp
Barberry – 1/2 cup
Boiling water – 2 cups
Salt – 2 tbsp
Oil – 2 tbsp
Take a large bowl and place basmati rice in it. Cover it with hot water. Set it aside. Basmati rice is easily available in stores where you get Middle Eastern and Indian Ingredients.
Wash the heads of garlic and cut the topmost part of the head. Set it aside.
Now toast the peppercorn, coriander seed and cumin on a pan for few minutes. You do not want it to burn!
Now grind this toasted spice in a food processor or mortar. Set it aside.
Take a pan and heat oil in it over very high flame. Add the boneless lamb to it and turn it occasionally to get it brown. Do this for about 10 minutes. Now remove the lamb and set it aside.
Stir the sliced onions and cook them till it gets soft. This should take 10 minutes. Now put the carrots and cook till they are tender. This should take 10 minutes too.
Add the browned lamb and mix it to combine with carrots and onions.
Now sprinkle some mixture of cumin, peppercorn and coriander on the lamb and add barberries to it. Barberry is also available easily! Add the garlic heads to this which we cut in the beginning. Reduce the flame to medium and cover it. Let it cook for 30 minutes.
Now wash the basmati rice and drain the excess water. Next, pour the drained rice over the mixture of lamb. Make sure you pour the rice evenly in a layer.
Now you would need to pour boiling water into the rice. Make sure the rice is covered with only 1/2 inch water. You do not need to stir this. Season the plov with salt and pepper. Reduce the flame to medium. Cover it and cook it till the rice gets tender and the liquid is absorbed. This should take 20 minutes.
Last but not the least, mix the ingredients together and serve the Plov on a plate. Garnish it with the whole garlic heads. Your dish is ready to serve!
