Ingredients For The Classic African Bobotie With Yellow Rice:
Minced meat – 1 kg
Crustless brown bread – 1 slice
Milk – 1 cup
Vegetable oil – 2 tablespoon
Onions – 2 (chopped)
Garlic – 2 cloves (minced)
Ginger – 1 tablespoon (grated)
Carrot – 1 (cubed)
Curry powder – 2 tablespoon
Hot Chutney or tomato chutney– 2 tablespoon
Apricot jam – 2 tablespoon
Turmeric powder – ½ tablespoon
Sultanas – ½ cup
Eggs – 2
Beef stock – 1 cup
Bay leaves – 2
Quartered almonds – 2 tablespoon
Salt – one tablespoon
Lemon juice – one tablespoon
Ingredients For The Yellow Rice:
Long Grain Rice – 1 Cup
Salt – ½ Tsp
Turmeric – 11/2 Tsp
White Sugar – 3 Tsp
Ground Cinnamon – ½ Tsp
Black Raisins – ½ Cup
Butter – 1 Tbsp
Water – 21/2 Cups
Method Of Preparation (Yellow Rice):
Rinse and drain the rice in cool water.
Combine Rice, Turmeric, Salt, Butter, Cinnamon, Sugar and Water in a saucepan. Bring the mixture to a boil and then reduce heat. Cover and cook on low heat for about 20 – 30 minutes. When the rice is fluffy remove from the fire. The subtle glow of turmeric and sweet bursts of raisins gives the yellow rice or Geelrys its unique taste. Enjoy the warm rice with the delicious Bobotie.
Method Of Preparation (African Bobotie):
Preheat the oven at 180 degrees.
Soak the bread in a little milk for some time. In the meantime, heat vegetable oil in a pan over medium heat. Add the onions, garlic and ginger and cook by stirring for 3 minutes. Put in the carrots and cook for 5 minutes. Add the meat and break the lumps using a spoon and cook for 6 more minutes with stirring.
Once the meat is brown, add the curry powder, sultanas and almonds and cook for 3 minutes. Mix up the chutney, fruit jam, beef stock, soaked bread and the lemon juice to the pan ingredients and season it with salt. Cook for 2 minutes over low heat and transfer it to a baking dish.
Cover it with aluminum foil and bake for 30 minutes.
Beat the eggs in a bowl, mix up the turmeric powder and remaining milk with it and put the bay leaves into it. Pour the egg mixture over the baked dish and bake for another 20 minutes in the oven. Allow it to cool for 3 to 5 minutes, garnish using curry leaves and serve hot.
