The Delicious Rum Raisin Rice Pudding Recipe

Rum Raisin Rice Pudding

Preparation Time – 20 Minutes
Cooking Time – 1 Hour
Serves – 6


Golden raisin – 1/2 cup
Dark rum – 1/4 cup
Whole milk – 2 3/4 cup
White rice (long grain) – 1 cup
Brown sugar – 1/2 cup
Granulated sugar – 1/2 cup
Unsalted butter – 2 tbsp
Salt – 1 tsp
Ground cinnamon – 1/4 tsp
Half and half – 1 cup
1/2 cup half and half
Cornstarch – 1 tbsp
Egg yolks – 3 (beaten lightly)
Vanilla extract – 1 1/2 tsp

 Method Of Preparation:

Step 1

Take a non stick saucepan and then combine the raisin and rum. Once you are done with this step, bring it to a boil on medium heat. Now remove it from the heat and let it seep in while you are making the pudding. When you keep it aside, the raisins will get soaked with the rum. This will give a very beautiful and yummy taste to the pudding later when you add these soaked raisins to the pudding. Keep it aside till you are cooking the pudding.

Step 2

Now you need a heavy saucepan. Make sure it is large enough to make the pudding for six people. Combine the long grain rice, milk, granulated sugar and brown sugar. Add the cinnamon, salt, butter and a cup of the half and half. Cook it on medium heat till the milk mix is gently boiled. Stir this mixture and cover the pan. Reduce it to low heat. Cook it for about 45 minutes till the rice gets perfectly cooked. The liquid should get absorbed. Check it after exactly 40 minutes whether it has cooked or not. However make sure you do not burn the rice. Also, do make sure that you are using good quality long grain rice for this recipe. The rice should be good quality!

Step 3

Now take a small bowl and put the cornstarch in this. Whisk in the half and half in it till it gets smooth. Whisk the egg yolks with it now. Now whisk the rice in the egg yolk mix. Now add this egg yolk and rice mix to the saucepan. Cook it on medium heat. Stir it constantly till the mixture starts bubbling. Cook it for about a minute till the mix gets nice and thick. Remove it from the heat.

Step 4

Now add the vanilla extract to the rum and raisin mix and add it to the prepared rice pudding. Divide the pudding and put it in 6 beautiful glasses. Cover the glass with a plastic wrap and keep it in the refrigerator for at least 2 hours. It should be nicely chilled before you serve it to your friends and family. You can also decorate the rum raisin rice pudding with some dried fruits on top. It tastes amazing! Also, chill and serve. It tastes the best when chilled.
