Chopped cranberries – 2 cups
Crown roast pork – 7 pound
White sugar – ½ cup

Direction To Prepare The Recipe:
Set the oven at 375 degree Fahrenheit or 190 degree Celsius.
This step is important because it is going to decide the taste of the recipe. Take the pork roast and season its surface with the salt and pepper. Place the seasoned pork roast in an open roasting pan with the ribs end facing down. Slide the roasting pan into the rack.
Allow to bake it for about 3 hours at 375 degree Fahrenheit. Roasting the pork will only cook it partially.
In the meantime, take a medium size bowl and add sugar and cranberries into it. Mix properly and slide aside. Place a large skillet over medium heat and add butter to the skillet. When the butter has melted, add the onions and the celery into it. Sauté the two until the two becomes tender. This might take about some 10 minutes. Now add the cranberry mixture to the skillet along with bread cubes, 2 teaspoon of salt, apples, ¼ teaspoon of ground black pepper, eggs, apple juice and the poultry seasoning. Stir all these ingredients to mix properly. Do this for some time.
When it is two hours, remove the roasting pork form the oven and turn its rib end down. Fill its cavity with the above prepared apple and cranberry stuffing. To check whether cooked later, insert a thermometer in the thickest part of the pork i.e. between the two ribs making sure that the corners of the thermometer does not touch any bone. This step needs utmost care, therefore if you are used to of cooking, and can recognize whether cooed or not, you may miss this last step.
Now return the stuffed roasted pork back to the oven and continue to roast it again at 190 degree Celsius for approximately 1 ½ hours or until you thermometer reads the internal temperature of the meat as 80 degree Celsius. There is one more thing to take care of in this step. In case the stuffing becomes too brown in color, cover it carefully with the help of an aluminum foil.
As the cooking portion is over, comes the serving part. To serve the pork, place the roast into a platter and allow to be there for about 15 minutes. This will make the carving easier.
