Preparation Time: 10 minutes
Cooking Time: 15 minutes
All purpose flour – 1/4 cup
Ground cumin – 1 tsp
Cayenne pepper – 1/4 tsp
Salt – 1/2 tsp
Vegetable oil – 2 tbsp
Pork chops – 4 boneless
Chicken broth – 1/3 cup
Coconut milk – 1/2 cup
Peanut butter – 2 tbsp
Honey – 1 tbsp
Ground ginger – 1 tsp
Salt – 1/4 tsp
Chopped green onions – 1/4 cup
Red bell pepper sliced thinly – 1/4 cup
Chopped Roasted dry peanuts – 1/4 cup
Fresh cilantro – 1/4 cup
Method Of Preparation:
Take a plate and combine flour, cayenne pepper, cumin and the salt. Stir so that all the spices get mixed properly and evenly. Coat the pork with the flour mix and shake to shake off the excess mix.
Take a large skillet and put some oil in it. Heat over medium heat. Now once it is hot, place the prepared pork chops. Fry for 3 minutes per side. It should get cooked through in this time.
While the pork chop is frying, stir the chicken broth, peanut butter, coconut milk, ginger, honey and salt together. Remove pork chops on a platter and make sure it stays warm.
Now you need to put the peanut sauce in the skillet. Cook it for at least 2 minutes till it gets thick. Pour the peanut sauce over the pork chops. Garnish it with the chopped green onion, peanuts, bell pepper and chopped cilantro. Make sure you are using fresh cilantro for this one.
