Direction On How To Prepare The Recipe:
Set the oven at 150 degree Celsius or 350 degrees Fahrenheit.
Take the lamb chops and season generously with salt and pepper.
Place a Dutch oven over high heat and add some oil to it. Place the lamb chops pieces into the oven and cook until each chop become golden brown in color from all the sides. This might take some 8 minutes. Transfer these pieces into a plate and reduce the setting from high to medium.
Now add a pinch of salt and onion to the oven and cook stirringly till the onion turns brown in color. Do this for 3 minutes or more if needed. Next, add garlic and cook stirringly for another 30 minutes. Now pour the pomegranate juice on top of these ingredients and scrape with the spatula to remove any brown bits sticked at the bottom of the pan. Stir and follow up with balsamic vinegar to the mixture. Stir an increase the setting to high. Heat the mixture till it starts boiling.
You already have added many ingredients to the mixture but it is not all, there is more to it. Now add the rosemary, red pepper flakes and the mint leaves to the Dutch oven containing mixture of the pomegranate juice. Stir occasionally till it boils. Allow to boil till the liquid is all gone or reduced to half of the mixture. This can take a minimum of 10 minutes. In this Dutch oven, transfer the previously seasoned lamb chops and if there is any juice then add that as well. Stir so that the mixture is well absorbed by the lamb chops. To make it effective, pour the pomegranate mixture over the lamb with the help of a spoon.
Once you have poured the pomegranate mixture over the lamb enough number of times, cover it and then shift into the oven. Allow to stay into the oven till, it the meat turns tender. This probably will take 2 hours. Once the oven cooking part is over, remove from the oven and transfer the lamb to a platter. Place the Dutch oven on high setting over a stove. Allow the remaining mixture to boil. This helps in skimming the fat that has accumulated. Do this for 5 minutes or till the liquid is reduced by 1/3.
Finally add honey into the mixture and then add a pinch of salt and pepper for taste. Place the lamb back in the mixture and stir to combine properly. This completes your recipe. The only thing left to do is to garnish it. Scatter pomegranate seeds, pumpkin seeds and sliced mint leaves on top and serve immediately.
