Serves : 8
Water – 1/4 cup
Plain yogurt – 1/2 cup
Lemon juice – 2 tbsp
Distilled white vinegar – 1 tbsp
Olive oil – 1 tbsp
Chopped onion – 1/2 cup
Garlic cloves – 2
Salt – 1 tbsp
Ground black pepper – 1/2 tsp
Ground cumin – 1/2 tsp
Ground nutmeg – 1/8 tsp
Ground cloves – 1/8 tsp
Ground mace – 3/4 tsp
Cayenne pepper – 1 tsp
Lamb shoulder (boneless) – 5 pounds
Method Of Preparation :
Place the water, yogurt, vinegar, lemon juice, olive oil, garlic and onion in a bowl. Whisk the cumin, nutmeg, salt, clove, cayenne pepper and mace till it gets blended.
Cut the lamb in 1/4 inch thick pieces. Mix the lamb the spice yogurt mixture we made in Step 1. Coat the lamb strips well. Cover this bowl with a plastic wrap. Let it marinate in the fridge for 12 hours.
You can let it sit in the fridge for a day too. The longer is better. It will soak in all the goodness of the spices.
Heat a skillet over medium-high heat. Cook the marinated lamb strips in batches. The fat should melt. The meat needs to get browned. Make sure it is not pink from the inside. This should take five minutes.
Once the lamb is done, serve it on a plate with a warm pita bread. You can put it on a fattoush too. Your dish is ready to eat!
