Vietnamese Chicken Baguettes:

Ingredients For Baguettes:
Bread Flour – 250 g
Active dry yeast – 11/2 tsp
Sugar – 1 Tbsp
Salt – 1 Tsp
Luke warm water – 180 ml
Vitamin C – 500 mg (1/2 tablet or capsule crushed) or acid ascorbic
Method Of Preparation (Baguettes):
In a bowl, combine sugar, yeast and water. Stir to dissolve all the ingredients. Add flour (half of it – 125 g). Stir well to obtain a thick mixture like the pancake batter. Leave the mixture in a warm area for about until you see bubbles on the surface of the mixture, which takes about 2 – 3 hours.
Add the remaining flour, vitamin C and salt into the dough. Knead the dough for about 10 to 15 minutes until it becomes elastic. If the dough is wet, you can add a tbsp of flour.
Cover and allow the dough to rest for about an hour in a warm place until the dough doubles in size.
Transfer the dough carefully on the work surface. Without deflating the dough divide it into four equal portions. Twist each piece inside out to form a ball. Rest the dough for about 10 minutes.
Take one ball at a time and roll it into a round shape using a rolling pin. Pinch the edgings together. Now roll again back and forth. Make it slimmer at the ends and thicker at middle like the banh mi shape.
Cover and leave for about an hour.
Preheat the oven to 230 degree C. Slash the baguette lengthwise by keeping the paper cut knife at 45 degree angle. Bake them immediately after slashing. Spray water on the dough and bake for 20 to 25 minutes. After about eight minutes spray water again on the baguettes and bake them evenly. Once it is baked turn off the oven. Leave the baguettes for about 8 – 10 minutes in the oven and then remove and cool on the rack.
Ingredients For Chicken Baguette:
Roasted chicken breast – 1
Baguettes – 4
Egg mayonnaise – 1 tablespoon
Fresh coriander – ½ cup
Cucumber – 1 (sliced)
Carrot – 1 (sliced)
Fish sauce – ¼ cup
Honey – 1 teaspoon
Lime juice – 1 tablespoon
White pepper – 1 teaspoon
Vinegar – ½ cup
Water – ½ cup
Sugar – 1 teaspoon
Salt – 1 teaspoon
Red chili – 2 (sliced)
Method Of Preparation (Chicken Baguette):
Shred the roasted chicken into pieces in a bowl using fork.
In another bowl, combine fish sauce, lime juice, white pepper, honey and one tablespoon water together. Stir the ingredients well and add the chicken to it.
Heat a medium-sized saucepan for preparing the pickling solution. Mix up water, vinegar and the required salt in the saucepan and stir in the sugar. Heat the solution until the sugar dissolves. Empty it into a fresh bowl.
Put the cucumbers and carrots into the prepared pickling solution and let it steep in for 15 minutes. Then, drain the solution and set the veggies aside.
Now, trim the ends of the baguettes and cut them vertically into long rolls. Spread one spoon mayonnaise over the baguettes and top it with the prepared chicken and veggies liberally and sprinkle some coriander leaves over it. Garnish using red chili slices and serve right away.
