Today, you are going to learn the preparation of maple roast turkey along with the gravy. This is an England style turkey suitable for the thanksgiving dinner. The recipe includes turkey which is stuffed with various items. However, you may try stuffing the apple mixture, various sausages or cranberry as well. In this recipe is used fresh marjoram which if you don’t have can be replaced with the 2 teaspoon of dried marjoram.

Apple cider vinegar – 2 cups
Chopped fresh marjoram – 2 teaspoon
Real maple syrup – 1/3 cup
Chopped fresh thyme – 2 teaspoon
Butter – ¾ cup
Grated lemon zest – 2 ½ teaspoon
Whole turkey – 14 pounds (neck and giblet reserved)
Chopped celery – 1 cup
Chopped onion – 2 cups
Salt and black pepper – for taste
Coarsely chopped carrots – 1 cup
Chicken stock – 2 cups
Bay leaf – 1
Chopped fresh thyme – 1 teaspoon
All-purpose flour – 3 teaspoon
Apple brandy – 2 teaspoon
Direction On How To Prepare The Recipe:
Take a heavy saucepan and place on medium to high heat. Add apple cider vinegar and the maple syrup in a bowl, mix and then transfer into the pan. Allow to cook till the mixture is reduce to half in amount. This might take about some 20 minutes. Now remove the pan from the heat and then add marjoram, ½ of the thyme and all part of the prepared lemon zest. Now add butter to the mixture and stir to mix properly. Whisk the mixture next till you find all the butter has gone or melted. To this mixture, add salt and pepper next. Give a final stir before you cover it with a lid and shift into the refrigerator. Keep it there till the mixture has become cold. You can prolong it into the fridge for the next two days and then proceed ahead or on the same day.
Set the oven at 375 degree Fahrenheit or 190 degree Celsius. Place an oven rack into the oven.
Now come an important part – washing the turkey. Wash the turkey and dry it with a cloth. Place the turkey into a roasting pan. Put your hand inside the turkey till the breast to make it loose. Inside the breast area, rub about ½ cup of the maple butter. In case, you plan to stuff the turkey, then it is the time when you should do it. Not only inside, but rub ¼ cup of the maple butter outside the turkey as well. Take a kitchen string and tie the legs of the turkey together. Don’t tie tight but make it loose slightly.
Add chopped onion, chopped carrot and chopped celery into a bowl and then scatter around the turkey which is kept into the roasting pan. If you like, you may add the giblets and the neck together with the vegetables as well. Now sprinkle the marjoram and the remaining thyme over the scattered vegetables and finally pour the chicken stock into the roasting pan.
Place the roasting pan containing the turkey into the oven and allow to stay there for some 30 minutes. Reduce the temperature of the oven till 350 degree Fahrenheit. Take the turkey out and cover it loosely with an aluminum foil. Continue keeping it there for up to 3 to 4 hour if unstuffed else 4 to 5 hour if stuffed. You can find out whether the turkey is cooked or not by inserting thermometer in the thickest part of the turkey i.e. the thighs. In case, the temperature is read as 180 degree Fahrenheit or 80 degree Celsius and around the stuffing, if 165 degree Fahrenheit or 75 degree Celsius, the turkey is cooked throughout. Remove the turkey from the oven and transfer from the roasting pan to the platter. Cover it with the foil again and save the mixture in the pan for gravy. Allow the turkey to rest into the platter for 25 minutes before you finally remove the foil and the stuffing and the carving.
Now comes the part in which you have to make the gravy. Strain the juice from the pan into a measuring cup. Add the chicken stock to the extent that you get 3 cups of gravy. Pour this mixture into a heavy saucepan and place the saucepan on high heat. Allow the mixture to boil. Until then, you may take another bowl and add the maple butter mixture and the flour. Mix these to prepare a paste of thick consistency or whisk until you get a broth. Add apple brandy, bay leaf, & thyme and then pour into the mixture boiling into the saucepan. Keep boiling until it is reduced and also thickened. Finally season the mixture with the salt and pepper to offer some taste. Serving according to you.
