Peanut oil – tbsp
Minced shallots – 2
Grated ginger – 1 1/2 inch
Minced garlic – 6
Minced Thai Chiles – 4
Mud Crab or Dungeness Crab – 2 whole
Homemade chicken broth – 2 cups
Tomato paste – 1/4 cup
Hot sweet chili sauce – 1/2 cup
Beaten egg – 1 large
Sliced green onions – 1/2 cup
Parsley leaves – 1 cup
Method Of Preparation:
Take a bowl and stir in the cornstarch with 2 tbsp of water. Set it aside. Now you need a large wok with a lid. You can use a Dutch oven too. It is very rare to find a Dutch oven in the home. Heat oil in it over medium heat till it starts shimmering. Stir in the sliced shallots, garlic, ginger and chilies. Cook till it gets fragrant. Stir for 1 minute. You do not want to burn it because the end result will be bad if the starting frying step goes wrong.
Now you need to know one basic step when it comes to cooking crabs. Whatever crab you are using, clean it properly, rinse it and cut it into pieces. You can get a live crab and put it in boiling water. When you put it in boiling water, the crab gets red in color on its own and gets cooked through. For this recipe, we need the non cooked crabs. You can ask your fish monger to do it for you. He can clean, rinse and break the crabs into pieces. He can give you the crab in good pieces.
Now add the chicken broth and crab pieces in the dutch oven or wok. It is best to use Chicken broth made at home but you can get the broth from stores as well. Increase the heat to high and bring it to a boil. Cover it loosely and then boil it. Decrease the heat if needed. The crab should turn red and cooked through. This should take 7 minutes. Keep a check.
Remove the cover and stir in the tomato paste and the Thai chili sauce. Let it simmer for 1 minute and then season it with salt, chili sauce and sugar. Stir in the cornstarch and let it boil. The sauce will thicken. You want a thick sauce for the chile crab. That is the consistency you will need for your chile crab!
Remove the oven or wok from heat and stir in the egg. Stir in the sliced green onions. Now serve it on a plate and sprinkle the Chinese parsley on it. Serve hot with plain rice. For your plan rice, you can just take 2 cups of rice and 4 cups of water. Boil it and once you see the grains puffed up and cooked, strain the water using a strainer. Your dish is ready to eat! You can eat with Chinese buns as well which is available in stores.
The steps of making this dish are so easy. You should definitely try it out at home. It is a beautiful crab dish which should be devoured. So, get the ingredients and start cooking. Your family and loved ones will surely love this Singaporean dish. Happy cooking!
