Today we have an excellent recipe for you which is restaurant quality and it is mouthwatering. Now the good part about the dish is that it is fishy and cheesy. Yes! It is not low on calories but it is definitely worth drooling over. The recipe is called Crawfish Quiche. Oh yes! The dish is so yummy that you would want to make it over and over again. This is not fit for the faint hearts. You would need some shopping to do before you cook this. Take a look and start cooking!

Here Is The Recipe Of Crawfish Quich:

Preparation Time: 35 Minutes
Cooking Time: 1 Hour
Serves: 6


All purpose flour – 2 1/2 cups
All purpose flour (extra) – for dusting
Salt – 1 1/2 tsp
Cayenne pepper – 1/2 tsp
Vegetable shortening (solid) – 1 cup
Ice water – 5 tbsp
Unsalted  butter – 2 tbsp
Yellow onions (diced finely) – 1/3 cup
Red bell pepper (diced finely) – 1/4 cup
Chopped garlic – 2 tsp
Crawfish tails (peeled) – 1/2 pound
Heavy cream – 1 cup
Eggs – 2
Fresh ground black pepper – 1/4 tsp
Tabasco sauce – a dash
Worcestershire sauce – 1/4 tsp
Chopped chives – 2 tbsp (keep another for garnishing)
Parmegiano Reggiano – 2 tbsp (grated)
Grated white cheddar – 1/2 cup
Grated cheddar – 1/2 cup

Method Of Preparation:

Step 1

Combine the one tsp of salt, flour and 1/4 tsp of cayenne pepper in a mixing bowl. Now cut in shortening till the mixture starts resembling like a course meal texture. Now add water, do not add all the water – just 1 tbsp at a time. Mix it gently till it forms a dough. Now form this dough into one ball. Wrap it with the plastic wrap and keep it in the refrigerator for about an hour. For best results, you can keep it for 8-9 hours in the refrigerator.

Step 2

Preheat your oven to about 400 degrees F. This is a very important step. Preheating your oven is the most basic step you need to follow when you are baking.

Step 3

Now remove the wrapped dough from the refrigerator and let it sit for a while till it gets back to normal temperature. This should take about 10 minutes maximum. Now dust the work surface with some flour and roll the prepared dough into a round 12 inch shape. The thickness should be 1/4 inch. Fold the dough now into fourths and then again unfold it in a quiche pan. Press the prepared dough at the sides and bottom of the pan. Use your fingers to do so. Use a rolling pin to cut the excess dough. Use a fork to prick the bottom of the dough crust. Make lots of pricks. Place a parchment paper on the crust and fill it with dried beans or pie weights. Bake this crust for 11 minutes. Remove it from the oven and let it cool a little. Remove the beans and parchment paper.

Step 4

Now reduce the temperature of the oven to about 375 degrees F. You need to make the quiche with the filling now. It needs a lower temperature.

Step 5

Now take a saute pan and melt some butter in it over medium heat. Add the chopped bell pepper, garlic, onion, 1/4 tsp of cayenne and 1/4 tsp of salt. Saute it for about 3 minutes. Add the tails of the crawfish and saute it for about 2 minutes. Remove it from heat and let it cool.

Step 6

Now take a mixing bowl and whisk the eggs, cream, 1/4 tsp of salt and 1/4 tsp of black pepper. Add the Worcestershire sauce. hot sauce, grated Parmesan and chives. Now arrange the mixture of crawfish evenly in the pastry. Sprinkle the grated Parmesan cheese over the mixture. Now pour the cream mix over the crawfish mix. Place it in the oven and bake it for 30 minutes or so. The center should get set and top should be golden. Remove it from the oven and let it cool for about 5 minutes before you slice it and serve it. Garnish it with the fresh chives and serve it warm to your family and friends.
