• Skinless, chicken breast – 4
• Large beaten eggs – 3
• Wild softened garlic butter – 100 gram
• Well-seasoned plain flour – 50 gram
• Sunflower oil – for frying
• Lemon wedges – for serving
• Panko or coarse dried breadcrumbs – 125 gram
• Mixed leaves – for serving

You have to handle the chicken breast very carefully. Take a knife and form a pocket in the chicken breast. Do the same in the other chicken breasts as well. If you don’t know how to do this, you have to take a knife and insert it into the thickest part of the chicken breast. Keep on pushing inside till halfway. Make sure that you don not cut it all throughout. Now push your fingers down into the cut part and then fill it with 25 gram of wild butter. Make sure that the butter go all inside the sliced pocket. Now do the same with the other chicken breast. Be careful with the stuffing. It should go all inside and not remain only at the midway. Once all the chicken breast ate filled with butter, place aside for some time. Till then, you can do the other ingredients.
Now take three shallow bowls and line each up on a table. In each of these bowls, you have to keep different ingredient. In the first bowl, you have to keep beaten eggs. In the second one, you have to fill with the bread crumbs and finally in the third one, flour. Now one chicken breast first and dip it into the bowl with flour. Next, insert into the bowl with beaten eggs and finally coat it properly with the bread crumbs. This not over yet, once coated with breadcrumbs properly, you can do dip into the bowl coating beaten egg again. Coat with the breadcrumbs again. Once the chicken breast is all covered with these ingredients, place into a platter. Now you know what you have to do with the chicken breast, do the same with the remaining three chicken breasts. Once all these chicken breast are done with coating, place next to the first chicken breast into the platter.
Now cover the platter with a cling film and place side to chill for some time. You can also place into the refrigerator for the same purpose.
Now there is one more step left before you finally serve it. For this purpose, set the oven at 180 degree Celsius. Take a pan and add some oil to it. The oil should cover at least 2 cm of the pan. Place the pan on medium to high heat. Once the oil has heated, add the chicken breast or kievs one at a time and allow to cook from each side for 2 to 3 minutes. The kievs should turn golden brown from each side. Once finished with cooking on medium heat, you have to place each Kiev in a baking tray. Shift the baking tray into the oven and cook for 15 minutes at least. Finally remove from the oven and serve into a platter along with the salad leaves and lemon wedges.
