Ricotta and Crab Cannelloni Recipe

A box of Cannelloni
Ricotta Cheese – 1 cup
Grated parmesan – 3/4 cup
Extra grated parmesan – 1/4 cup (for sprinkling)
Egg yolk – 1
Chopped basil leaves (fresh) – 1/2 cup
Crab meat – 1 pound
Salt – 1/4 tsp
Fresh ground white pepper – 1/4 tsp

For Bechamel Sauce –

Unsalted butter – 5 tbsp
All purpose flour – 1/2 cup
Warmed whole milk – 4 cups
Salt – 1/2 tsp
Ground white pepper – 1/4 tsp
Grated nutmeg – a pinch

Method Of Preparation:

Step 1

Firstly you need to take a large pot and fill it with salted water. Now boil it over high heat on the stove. Add the cannelloni and cook till it gets tender. It should be firm to bite still. Stir it occasionally for about 10 minutes. Drain the cannelloni. The excess water should not be there.

Step 2

Now take a bowl and mix the Parmesan, ricotta, basil, egg yolk, crab, pepper and salt together. Mix it well.

Step 3

Now preheat your oven to 350 degrees F. This is a very important step when you are baking. Do not miss this step.

Step 4

Now you need to fill the prepared cannelloni with crab mix that you prepared and then place it on a baking dish. Make sure you butter the baking dish. Top the stuffed cannelloni with the prepared bechamel sauce. We will learn how to make the sauce in the next step. Sprinkle the remaining grated cheese. Bake till it gets bubbly and the top should be golden brown. It should take 15 minutes or so.

Make sure you do not boil the sauce. Remove it from heat and stir the nutmeg, pepper and salt. You can make the sauce 2-3 days ahead. Cool it and cover it.

Step 6
