Here Is The Recipe For Sticky Barbecue Chicken Cutlet:

Preparation Time: 3 Hours
Cooking Time: 50 Minutes
Serves: 4


Water – 4 cups
Salt – 2 tbsp
Whole black peppercorn – 1 tsp
Chopped and juiced lemon rind – 1/2
Thyme sprigs – 5 (fresh)
Brown sugar – 1 tbsp
Chicken thigh cutlets – 8
Extra virgin olive oil – 1 tbsp
Potato wedges (for serving)
Coleslaw – 450 grams packet
Lemon wedges (for serving)

For The Barbecue Sauce –

Tomato sauce – 375ml
Chilli sauce – 60ml
Chopped onion – 1/2
Peeled garlic clove – 2
Brown sugar – 1 tbsp
Honey – 1 tbsp
Worcestershire sauce – 1 tbsp
Thyme sprigs – 5
Smoked paprika – 2 tsp
Dry mustard powder – 1 tsp
Ground cumin – 1 tsp

Method Of Preparation:

Step 1

Combine the peppercorn, water, lemon juice, rind, water, sugar and thyme in a ceramic bowl. Make sure you use fresh thyme leaves. Add the chicken and stir it to combine it with the ingredients in the bowl. Cover it and place it in the fridge for 30 minutes or till 4 hours in order to brine.

Step 2

Now you need to make the barbecue sauce. Blend all the ingredients till they get smooth. Bring it to a simmer on medium heat. Use a saucepan to do so. Reduce the heat to low. Simmer it by keeping it partially covered. Stir it in between for 15 minutes till it gets thick. Now season it with salt and pepper. Reserve at least one third of the barbecue sauce. Your sauce is done here. Now you need to move on to the next step.

Step 3

Now heat the barbecue grill on medium heat. Drain the chicken from brine and pat it dry using a paper towel. Rub it with some oil and season it. Cook the prepared chicken and turn it for about 10 minutes. Baste it with the marinade and continue to cook. Baste it generously using the marinade and turn it every 2-3 minutes. Do this for 20 minutes till the chicken gets cooked through.

Step 4

It is serving time! Oh yum! Serve the chicken with the potato wedges. You can make potato wedges at home or you can buy the packaged ones and serve it with the chicken. You can also serve it with the potato mash. Serve it with the reserved sauce, lemon and coleslaw. Sprinkle salt on the potato wedges. Your dish is ready to serve to your guests.
