Cheesy Smoky Aubergine Garnished With Coriander:
1 big aubergine, 1 onion, a small piece of ginger, 2 cloves of garlic, 1 red tomato, mozzarella cheese, olive oil, butter, coriander leaves, green chili, salt and sugar.
Rub some olive oil on the skin of aubergine. Place it on a high flame to burn the aubergine. But before burning, do not forget to prick it with the help of a fork. Unless you prick it, aubergine may burst out while placing it on the flame. After burning it eliminate the burnt skin and remove the pulp.
Mash it properly. Chop tomato. Make juliennes of onion, grate ginger and mince garlic cloves. Chop 2 green chilies very finely and eliminate the seeds. Grate mozzarella cheese and keep aside. Chop fresh coriander leaves and keep them in the refrigerator to retain its color.
Heat 2-3 tablespoons olive oil in a container. Add chopped tomato, onion, grated ginger and minced garlic in the oil. Keep stirring to fry them. Add mashed aubergine in the container and keep stirring. Add salt to taste and pinch of sugar. Pour little amount of water in it and mix it properly.
Keep cooking it for 5-6 minutes keeping the lid on so that the whole things get mixed properly. Add about 1 cup grated cheese and cook for further one minute. Remove it from oven and add chopped green chili and a tablespoon of butter in it. Keep the lid on for 5-6 minutes. Garnish it with freshly chopped coriander leaves and serve it hot with hot bread.
Tangy Aubergine Curry:
1 aubergine, 1 capsicum, 1 onion, 5 cloves of garlic, 2 tablespoons soya sauce, black pepper powder, lemon, corn flour, egg, salt and vegetable oil.
Cut aubergine in small pieces. Mix corn flour, egg, salt and a tablespoon oil and some water to make a smooth paste. Make dice of capsicum. Grind garlic and onion to paste. Grate lemon zest and squeeze lemon to remove the juice.
Heat ample quantity oil in a pan. Soak aubergine pieces in the batter. Now deep fry the aubergine. Fry till they turn golden brown. Remove them from oil and keep them aside. Now add 2 tablespoons vegetable oil in a pan. Heat it slightly. Add onion and garlic paste in the oil. Keep stirring to cook the paste.
Add some water to make gravy. Add salt and sugar In the gravy according to your taste. If you try to make the gravy thick, add some corn flour in the gravy. When gravy is ready add soya sauce, a few drops of lemon juice, capsicum dices and pinch of grated lemon zest. Remove it from the oven and pour the gravy on the fried aubergine. Keep the lid on for sometimes. Serve it hot with steamed rice.
Plain Aubergine Fry:
Aubergine -1, salt, sugar and Canola oil
Make medium slices of aubergine. Sprinkle salt and some sugar dust on both sides of aubergine.
Heat canola oil in a pan. Deep fry aubergine slices in the oil. Keep frying till they turn golden brown. Remove them from oil and place them on paper napkin so that the paper soaks the excess oil. Serve them hot with bread or steamed rice.
