Red Mushroom Curry:
Preparation Time: 20 Minutes
Cooking Time: 25 Minutes
10 button mushrooms, 1 potato, red chili powder – 1 teaspoon, turmeric- 1 teaspoon, 1 onion, 3cm. ginger, 2 cloves of garlic, green chili, curry leaves, coriander leaves and coconut oil.
Wash button mushroom properly with warm water. Cut each mushroom into four pieces. Peel potato and cut them into small pieces. Grind onion, garlic and ginger to paste. Chop curry leaves and coriander leaves and keep them separately. Slit green chili and eliminate seeds.
In a pan add 1 tablespoon pure coconut oil and keep them aside. Heat the oil. Add mushroom and potato in it. Stir well to fry them slightly. In the time of frying, add little amount of salt on those things.
After that, remove them from pan. Add another tablespoon coconut oil in it. Add the spices. Stir continuously to fry everything. Add turmeric powder and chili powder in the spices. Add potato and mushroom in it. Add chopped curry leaves and salt to taste. Keep stirring to mix everything.
Add water and keep the lid on. Keep them boiling for 10-15 minutes. In the normal course, this time is adequate to boil everything. After that, remove the lid from the pan. Remove it from the oven. Garnish the curry with chopped coriander and green chili. Serve it hot with steamed rice.

10-12 button mushrooms, 2-3 green chilis, 1 onion, 5 cloves of garlic, 1 bell pepper, salt, soy sauce, vegetable oil and black pepper.
Wash mushroom properly with lukewarm water and cut each of the mushroom into four pieces. Cut green chilies and eliminate seeds. Make juliennes of onion and mince the garlic. Dice capsicum. Grind the black pepper.
In a pan add 1 tablespoon vegetable oil. Add juliennes of onion and minced garlic. Stir continuously to fry them little bit. Add mushrooms and stir well. Sprinkle some salt over it and keep the lid on for 5-6 minutes to ensure that mushrooms are soft. Again remove the lid and add dices capsicum and chopped green chili.
The hot taste of the preparation depends on the amount of chili. For this reason, amount of the chili in the preparation may vary. Stir continuously and pour 1 tablespoon black soy sauce in it. Stir to mix everything. Remove it from pan and sprinkle some freshly ground black pepper powder on it. Serve it hot with boiled noodles.

Mushroom 10 pieces, small boneless chicken 15-20 pieces, 1 carrot, 1 bell pepper, cabbage, lettuce leaves, black pepper, mayonnaise, olive oil, salt.
Cut mushroom into small pieces. Boil chicken and strain the water. Make fine slices of carrot. Dice capsicum, chop cabbage and lettuce.
In a pan add little amount of olive oil and add mushroom on it. Sprinkle salt, stir and keep the lid on for 5-6 minutes to make the mushroom soft. After that, remove them from pan.
In a bowl add mushroom, chicken and other vegetables. Sprinkle some salt and add 1 tablespoon olive oil in it. Mix well. Add 2 tablespoons of mayonnaise and sprinkle some black pepper on it. Mix well and serve it with fresh bread at breakfast.
