Okra, also known as lady’s finger, is a highly nutritious vegetable and it is easily available too. Since it is a low calorie vegetable it is a must in the list of food items for obese people. It is rich in fiber and for this reason it helps to digest your food and clears bowel. Okra also helps to stabilize blood sugar levels. Apart from these features it contains a good amount of vitamin A, vitamin C and different antioxidants, and quite a number of essential minerals. For these reasons it is recommended that one should eat okra at least twice a week.
Here Are Three Tasty Healthy Preparations Of Okra And They Are Not Difficult To Make Also:
1. Spicy Okra With Cherry Tomato:
Okra – 15-20 medium sizes, red cherry tomato – 3, cumin seeds – 1 teaspoon, dry red chili- 1, green chili- 4, vegetable oil- 2 tablespoons, turmeric powder and salt.
Wash okra properly and cut to eliminate little amount of both upper and lower side. Now slit them. Rub a little amount of salt and turmeric over them and keep them aside. Cut each cherry tomato into four pieces and keep them aside. Slit green chili and eliminate the seeds.
Pour about 2 tablespoons vegetable oil in a pan. Heat the oil. Add a teaspoon cumin seed and a dry red chili in the oil. Now add okra and cherry tomato on the oil. Sprinkle salt and turmeric on it and stir well to mix everything. Keep the lid on for 5-10 minutes to make okra soft. Add green chili and at last remove it from oven. Serve it hot with rice or bread.
2. Cheesy Okra With Shrimp And Potato:
Okra – 20-25, shrimp – 250 grams, potato – 1 large or 2 small, onion – 1, garlic – 2 cloves, mozzarella cheese, olive oil and salt.
Wash okra properly and cut them into small pieces, boil potato with jacket. When it is well boiled, remove its jacket and dice it. Grate mozzarella cheese and keep them aside. De-shell shrimp and wash them properly. Strain the water. Peel and cut the onion and remove its flakes. Crush garlic to paste.
Heat about 2 tablespoons olive oil in a pan. Add the shrimp and sprinkle some salt over them stir continuously and add the garlic paste. Keep stirring to fry the garlic and then keep the lid on for a minute or two of the container keeping the flame low to make shrimp soft. Then add onion, okra and potato dices on the prawn. Sprinkle salt over them. Keep stirring till they are well cooked and turn slightly brown. At last sprinkle one cup grated mozzarella cheese over the food. Let the cheese melt and remove it from oven. Serve it with steamed rice or Mexican bread.
3. Okra With Carrot And Lemon Zest:
Okra 10-15 okra, carrot – 1 small, lemon – 1, olive oil 2 tablespoons, butter 1 teaspoon, black pepper powder – 1 teaspoon, salt to taste.
Wash and cut each okra into two pieces. Peel and make thin slices of carrot. Grate lemon zest and keep them aside. Squeeze one lemon and remove the juice.
Heat oil in pan. Add carrot and okra pieces on pan. Sprinkle salt and keep stirring them on low flame till the whole vegetables get soft. When vegetables are almost ready, add butter and lemon jest over it. Stir to mix them and remove it from oven. Add 7-8 drops of lemon juice and sprinkle black pepper powder over it. Stir well to mix everything. Keep the lid on for 5-10 minutes for a good smell. Then serve it hot.
