Don’t think, just do because now you are going to learn your own recipe of the cupcake and bake not one or two but as many as you want. Down here is given the recipe of margarita cup cake. There are ingredients taken that makes this cupcake even more delicious than what you see in the market. It has vanilla and margarita that are the backbone of the cupcake. Also, the icing done in the final step renders it an amazing look but that depends on how you perform the icing and decorate the cake. Preparation Time Of The Recipe: 20 Minutes

Cupcake Ready In: 45 Minutes
1 ½ tablespoon of freshly grated lemon zest
¼ cup of canola oil
¼ cup of freshly squeezed lime juice
1 cup of soymilk
½ tablespoon of vanilla
1 1/3 cups of flour
2 teaspoon of tequila
¾ cup of granulated sugar
½ tablespoon of salt
½ tablespoon of baking powder
¼ tablespoon of baking soda
For Icing The Cupcake
1 teaspoon of soymilk
1 teaspoon of tequila
¼ cup of margarine
3 teaspoon of lime juice
Small drop of green food coloring
1 pinch of kosher salt
2 ½ cups of confectioner’s sugar
½ cup of decorator sugar (having large crystal)
How To Be Ready With The Cake?
For Preparing The Cupcake
Set the microwave oven on 350 degree Fahrenheit.
In a large bowl, put tequila, oil, soymilk, lemon zest, lime juice and sugar. Beat until the mixture becomes fine. In a separate bowl, combine baking powder, flour, baking soda and salt. Combine well and transfer into the bowl containing soymilk mixture. Mix the ingredients until the mixture becomes smooth in texture.
Now fill the cupcake bowls with 3/4th of the mixture. You can use an ice cream scoop for that. Once all the bowls are filled carefully, place into the oven and bake for the next 20 minutes. You may extend the baking time if the toothpick inserted into the middle of the cupcake doesn’t comes out clean. Once the cupcakes are baked properly, transfer them into the rack for cooling.
For Icing The Cupcake
Take margarine in a bowl and blend until it becomes fluffy and soft. Pour soy milk, stir and then add tequila, lime juice, soymilk and food coloring in the bowl. Use only a small pinch of food coloring. Stir properly before you add 2 cups of the confectioner’s sugar. Once added, blend to give it smooth and creamy texture. In case, the icing seems too liquidly, add the remaining confectioner’s sugar and stir again. Refrigerate the mixture until your cupcake is all set to be decorated.
It is time to decorate the cupcake. Spread the icing on the edges and the top of the cupcakes. You may form your own design if you know any. Also on the outer edges of the cupcake, roll the sugar crystal to make it look even amazing and yummy to eat. Serve immediately to you and your family or friends.
