Vegetarian Black Bean Taquitos Recipe

Olive oil – 2 tablespoon
Black bean – 1 can
Flour tortillas – 12
Red bell pepper – 1 (seeded and cut)
Green bell pepper – 1 (Seeded and cut)
Pattypan squash – 2 (diced)
Smoked paprika – 1 teaspoon
Cumin – 1 teaspoon
Pepper jack cheese – 8 ounce (shredded)
Hot sauce – 1 tablespoon
Salt – 1 tablespoon

Method Of Preparation:

Step 1

Preheat the oven to 350 degrees.

Step 2

Heat olive oil in a pan over medium heat. Stir in the squash and bell pepper. Cook for 5 minutes and add the smoked paprika, cumin, black beans and hot sauce to the pan. Add the required slat and stir frequently. Cut off heat after 3 minutes and toss it with cheese.

Step 3

Place 3 teaspoon of the black bean mixture on each tortilla and roll it up. Transfer the rolled tortillas to a baking sheet and spray them with some cooking spray. Sprinkle the tortilla with kosher salt and bake for 20 minutes. Once the tortillas turn golden brown, remove them from the oven and serve hot with the sauce of your choice.

Corn tortillas – 10
Black beans – ½ cup (cooked)
Corn – ½ cup (steamed)
Avocado – ½ fruit
Cheese – ½ cup
Cumin – 1 teaspoon
Chili powder – 1 teaspoon
Lime juice – ½ teaspoon
Salt – 1 dash
Vegetable oil – sufficient for shallow frying

Method of Preparation:

Step 1

Heat the oil in a pan.

Mix all the ingredients in a bowl except the tortillas.

Step 3

Spoon out 2 teaspoon of the vegetable mixture over each tortilla and roll it up. Use a toothpick to hold the roll tight.

Step 4

Once the oil is heated, fry the tortillas over medium to low heat. Fry until they turn golden brown, top it with some cheese and serve hot with your favorite sauce.
