Whole Roasted Cauliflower With Red Wine, Shallots And Wheat Berries Recipe

Ingredients Necessary For The Recipe:

Cauliflower with its outer leaves removed – 1 large
Olive oil – 1 teaspoon
Mustard seeds – 1 tablespoon
Quartered banana shallots – 3 large
Thyme leaves – 2 teaspoon
Portobello mushrooms, sliced – 4
Crushed garlic cloves – 1
Red wine – 150 ml
Wheat berries – 350 gram
Young lead spinach – 100 gram
Vegetable stock – 11 hot
Crushed pink peppercorns – ½ teaspoon
Roughly chopped hazelnuts – 50 gram
Finely grated vegetarian parmesan – 50 gram

Instructions On How To Prepare The Recipe:

Step 1:

Preheat the oven to 180 C. take a chopping board and place cauliflower on it. Cut the tough stem of the cauliflower away. Cut so that the base of the cauliflower remains intact.

Step 2:

Take a large flameproof casserole fish and heat oil in it on low-medium heat. Add mustard seeds to the oil. Once, the ingredients start popping up, add shallots and gently fry the two for about 4-5 minutes. Keep on stirring in between. Now pour wine & then spinach. Allow the leaves on the spinach so that it wilts.

Step 3:

Next, add wheat berries to the dish and season well so that it combines well. Now with the help of a spatula, make a deep cave in the center and place the cauliflower in it. Pour the stock around the cauliflower followed by seasoning it.

Step 4:

Cover the recipe and transfer it to the oven. Allow it to be there for the next 50 minutes or up to 1 hour. You can cook until the cauliflower and the wheat berries turn tender. Finally remove the dish from the oven and sprinkle peppercorns, hazelnuts and parmesan on top of the cauliflower. Return the dish back to the oven for cooking it further. This completes your recipe, finally serve to everyone or just to yourself.
