Yum Crab And Corn Cakes With A Spicy Mayo Recipe

Here Is The Recipe For Crab And Corn Cakes With A Spicy Mayo Recipe:

Preparation Time: 15 Minutes
Cooking Time: 25 Minutes
Serves: 8


Mayonnaise (whole egg) – 180ml
Tomato pesto – 1 tbsp
Red Tabasco sauce – 3 drops
Corncobs – 2 (remove silk and husk)
Blue Crab Claw Meat – 2 cans (140 grams)
Sliced shallots – 2
Fresh coriander (chopped) – 1 tbsp
Grated lemon – 1 tsp
Self raising flour – 75 grams
Whisked egg – 2
Olive oil – 2 tbsp
Quartered grape tomatoes – 5
Coriander leaves (for serving)

Method Of Preparation:

Step 1

Combine the pesto, tabasco and mayonnaise in a medium bowl. Cover it and place it in the refrigerator till it is prepared.

Step 2

Take a large saucepan and cook the corn in boiling water for about 10 minutes till it gets tender. Drain the water and set it aside for about 10 minutes. Let it cool. Cut the corn cob and shorten the length. Remove the kernels. Transfer the corn kernels to the bowl and stir in the shallot, crab, lemon rind and chopped coriander. Season it with pepper and salt. Cover it and place it in the fridge for about 10 minutes. Let it chill.

Step 3

Now combine the egg and the flour. Add the blue crab mix and stir it to combine. Now take a frying pan. Make sure it is a non stick frying pan. Heat half of the oil in that pan on medium heat. Add 7 tbsp of the blue crab mix to the pan. Flatten it using a egg lifter. Cook it for 2 minutes on each of the sides till they turn golden. It should get cooked through. Repeat and fry in batches.

Step 4

Top each of the crab cakes with mayonnaise mix and coriander and tomato. Your dish is ready to eat!
