We cannot say that it is very easy to make but you will surely get a cracking dish once you follow the steps. How about making it for Christmas? This will be a hit at your home! Here Is The Recipe For Toffee Pear Pudding:
Preparation Time: 25 Minutes
Cooking Time: 50 Minutes
Firm pears – 8
Caster sugar – 200 grams (golden)
Cinnamon sticks – 2
Star anise – 1
Cloves – 6
Lemon – 1
Orange – 1
Ice cream (for serving)
Pitted dates – 250 grams
Linseeds – 2 tbsp
Almond milk – 300 ml (unsweetened)
Vegetable oil (for greasing) – 200 ml
Muscovado sugar – 175 grams
Self raising flour – 200 grams
Soda bicarbonate – 1 tsp
Mixed spice – 1 tsp
Method Of Preparation:
First step is to peel the pear and cut it from the bottom to give it a flat base. Make sure the height is good enough to fit in the tin. Use a knife to cut the pips from the pear base. Chop the scraps of the pear roughly. Discard the pips and set it aside. Now in a saucepan add 600 ml water, star anise, sugar, cinnamon and the fruity zests. Bring it to a boil and let it simmer till the sugar gets dissolved. Add the prepared pears and cover it with a lid or use a baking parchment. Poach it gently for about 10-15 minutes. The knife should slide in beautifully. Leave it to cool.
Now you need to make the sponge. Just put the linseeds and dates together in a saucepan and add the unsweetened almond milk. Bring it to a simmer and cook it for about 3 minutes till the dates get soft. Pour it into a processor and blend it till it is smooth. Add some oil and blend it again. Scrape it into a bowl and set it aside to cool. Heat the oven to 180 degree C. Grease the baking tin and line it with a baking parchment.
Now keep the dry ingredients in a mixing bowl with about 1/2 tsp of salt. Mix it well and you need to break any lump of sugar using your fingers. Shake the mixing bowl in case any lumps are there, they will come to the surface. Add the oil mix and the dates. Stir it well. Fold the chopped pear scraps in. Now scrape the mix into the prepared tin. Put the pairs in, they should be straight up. Bake for about 40 minutes. It should get cooked through. Use a skewer to check if the inside have cooked. If it comes out clean, it is baked to perfection. Bake for another 10 minutes if it is still wet. Check again once it is done.
The pear poaching liquid should be back to boiling now. Let it simmer till it gets reduced to a yummy glossy syrup. Once the pudding is cooked, let it cool for 10 minutes. Brush the syrup on top and serve it with some ice cream. Ice cream is optional! You can serve it with some syrup at the side as well. Your dish is ready to serve!
