Preparation Time: 15 minutes
Cooking Time:20 minutes
Coconut Milk 200 ml
Sugar 125 gm
Grated Coconut 1/3 cup.
First preheat your oven in 160 degree Centigrade or 320 degree Fahrenheit. Keep a Cake tin filled with water in the bottom of the oven.
Now take a non stick pan pour coconut milk in it and allow it to boil. Then grind the sugar in a grinder to make sugar powder. Pour powdered sugar in this pan and stir it to mix it continuously. Cook it in medium heat until it starts reducing.
Cook it until the sugar melts completely. Take another bowl and break the eggs. Pour the contents in this bowl. Beat the eggs with the help of a hand blender until it generates foam. Now pour the boiled coconut milk in this bowl.
Then add half of the grated coconut in this bowl. Keep the rest of the grated coconut for garnishing. Mix it well by using an electric hand blender. When it gets smooth pour it in muffin cups. Bake it for a few minutes.
When it goes thick like pudding take it out from the mould and allow it to cool. Refrigerate your Coconut Pudding before you serve it. Pour your Coconut Pudding in a plate, sprinkle grated coconut from top to garnish it and then serve your Coconut Pudding.
You can use castor sugar instead of using normal powdered sugar in your coconut pudding recipe. If you have restriction for sugar you can use any kind of sugar substitute available in market in your recipe.
