Chicken breasts – 4 cups shredded
Onion – 2
Garlic – 6 cloves
Chicken broth – 3 cups
All purpose flour – 1 tbsp
White beans – 1 1/2 cups
Green chilies – 1/2 cup (diced)
Jalapeno – 1
Corn – 1/2 cup
Cumin – 2 tbsp
Salt – 2 tsp
Pepper – 2 tsp
Oregano – 2 tsp
Cayenne pepper – 1/2 tsp
Cilantro – 1/2 cup
Evaporated milk – 1 cup
Lime juice – 2 tbsp
Cream cheese – 1 cup
Olive oil – 2 tbsp
Tortilla strips – 2
Monterrey Jack cheese – 1 cup
Step By Step Instructions:
In a large stock pot take olive oil, add chopped onions, Jalapeno, finely minced garlic and saute it for a minute or two until the onions are translucent and the raw aroma of garlic is turned into fragrance. Add in flour and stir it until it is nicely combined. Now add lime juice.
Now take chicken breast and cook it until it is tender, once it is done shred it using two forks. Add the shredded chicken to the stockpot, add along chicken broth and nicely stir.
Add cooked White beans, nicely diced Green Chilies, Corn and stir for a minute.Add Evaporated milk and stir it until it is nicely combined. Turn up the heat and let it boil.
Now add ground Cumin, Cayenne pepper, dried Oregano and nicely stir. Add in Salt and black pepper to the chili. Nicely boil it for few minutes stirring continuously and reduce the heat to medium, let it simmer. Cook, it uncovered under medium heat for
about 25 minutes until it is thick and creamy. You can make it thick as per your liking. If you want it more thick, cook for more time.
Add Cream cheese and stir it constantly until it melts and incorporates completely. Now once it has reached the desired consistency you can switch off and add in shredded Monterrey jack cheese on top of it to make it more tastier and creamier.
