1 cup chocolate cookie crumbs
2 pints fresh strawberries, halved
2 cups semisweet chocolate chips
3 tablespoons butter, melted
1/2 cup water
2 tablespoons light corn syrup
1 tablespoon white sugar
2 1/2 cups heavy cream, divided
Make sure that you are ready with all the ingredients. Take a medium sized mixing bowl. Add chocolate cookie crumbs and butter, blend it thoroughly. Take a 9-inch springform pan. Press the crumbs and butter mixture evenly into the 9-inch springform pan. Cut the strawberries into half. Arrange strawberry halves around the pan with cut sides against the side of pan and pointed ends up. Keep the arrangement aside.
Take a small sauce pan and heat it over medium flame. Pour water and corn syrup into the small sauce pan. Bring it to a boiling temperature. Simmer the flame and cook for 1 minute. Take the chocolate chips in a blender container. Immediately pour the corn syrup mixture over the chocolate chips and blend it well until it becomes smooth. Pour it into the mixing bowl and allow it to cool well at room temperature.
Meanwhile the chocolate mixture cools, Make stiff cream by whipping 1 1/2 cups of the cream.
Use a large whisk or rubber spatula and fold 1/3 of the whipped cream onto the cooled chocolate gently to lighten it. Now gently fold the remaining whipped cream mixture until it is thoroughly blended.
Mousse is ready. Transfer the mousse onto the prepared pan. Smooth the top with a spatula. The strawberry halves might extend about the chocolate mixture. If that is the case cover it with a plastic wrap and place it in the refrigerator for 4 to 24 hours.
Take a medium sized beating bowl , add 1/2 cup of cream and sugar. Beat until the mixture forms stiff peaks.
Take the mousse from the refrigerator, two hours before serving, remove the side of the springform pan and place the cake on a serving plate.
Now take the whipped cream and dollop or pipe it onto the top of the cake. Arrange the remaining half cut strawberries on to the top of whipped cream.
