Chicken Wings – 1.5 lbs
Balsamic vinegar – 1/4 cup
Raspberry jam – 1/2 cup
Butter – 2 tbsp
Cornstarch – 2 tbsp
Ginger – 2 inch
Garlic – 6 cloves
Chilli flakes – 1 tsp
Salt – 2 tsp
Black pepper – 1 tsp
Water – 1/4 cup
Spring onion – 1/4 cup
Soy sauce – 1 tbsp
Step By Step Instructions:
Take Chicken wings and rinse it thoroughly, pat it dry with paper towel. In a bowl add Chicken wings, Salt, Pepper, Chilli flakes, finely minced garlic cloves and 1/4 tbsp of Soy sauce and marinate it for 30 minutes. Keep it in the freezer to marinate it better as this allows the chicken to absorb the ingredients and makes it perfect.
Dust the marinated Chicken with Cornstarch and toss them until they are evenly coated to the chicken wings, shake off the excess flour from the chicken.
Preheat the oven to 375 degrees. Take a baking tray lined with a baking sheet and grease it with virgin olive oil. Now place the marinated and coated Chicken wings on the baking sheet with space between chicken wings. Bake the chicken for about 45 to 50 minutes until it is crisp and golden brown.
Start preparing your Raspberry balsamic sauce when the Chicken is baking in the oven. In a saucepan add Balsamic vinegar, remaining Soy sauce, Raspberry jam, Water and grated fresh Ginger and boil them in a medium to low heat whisking it constantly to mix up all the ingredients. Bring it to boil for 5 minutes stirring it continuously. At this point, the sauce will be thick and will be in syrupy consistency. Remove from heat and add butter to the sauce. It will be thick as it cools down.
The final step is to remove the Baked Chicken Wings from the baking tray and placing them in a bowl, add the prepared Raspberry Balsamic sauce on top of it and toss it until the sauce is fully coated. Garnish it with chopped spring onions. The spring onions actually enhance the taste of the chicken as it helps to balance the taste between sweet and tangy sauce plus it looks presentable.
