Cooking Time: 15 Minutes
Serves: 4


Rice noodles (thin one) – 4 ounces
Vegetable oil or peanut oil – 2 tbsp
Lime wedges (serving)
Lime juice – 3 limes
Teriyaki sauce – 4 tsp
Jalapeno pepper – 1 (green or red)
Peeled ginger – 1 piece of 10-12 inches
Lime zest – 1 lime
1 Red onion – sliced
Sliced bell pepper – 2 (thin sliced)
Ground turkey – 1
Unsalted roasted cashews (chopped) – 1/4 cup
Chopped cilantro – 1/2 cup
Romaine lettuce (hearts) – 2 (separate the leaves)

Method Of Preparation:

Step 1

Firstly, you need to cook noodles. See the label on the package of the noodles and cook it accordingly. Drain the water and toss the noodles with some vegetable oil or peanut oil. The peanut oil will be preferred for this preparation. Now whisk the teriyaki sauce and lime juice in a bowl. Use 2 tsp of the teriyaki sauce and the lime juice. Combine the diced jalapeno, lime zest and the ginger in a processor. Pulse it till it gets finely chopped. You can chop these ingredients finely with a knife as well. Make sure you cut it finely.

Step 2

Now take a skillet and heat the remaining peanut oil in it. Make sure you use a non stick skillet for this. Heat over medium heat. Now add the cut onion and cook it till it gets soft. This should take 5 minutes or so. Now add ginger mix and cook it. Stir till it gets toasted for about 1 minute. Now add the bell pepper. You can use both yellow and green bell pepper. Cook and stir for about 2 minutes. Add the yummy turkey and also add the remaining teriyaki sauce. Cook it and stir it till the meat gets cooked through. This should take 4 minutes or so.

Step 3

Now you need to remove it from the heat and stir the lime juice mix in. Add the herbs and cashews as well. Now you need to pile up the turkey mix and noodles in the romaine lettuce leaves. Serve it with the cut lime wedges. Your dish is ready to serve to your family and friends!
